Ingredients:
6 Tb coconut or gluten-free flour
1/4 tsp EACH salt, garlic powder, ground red pepper
2 lbs chicken breast or thigh (skinless)
1 Tb coconut, avocado, or MCT oil
4 Tb Franks Hot Sauce (or your favorite brand)
1 Tb butter (from grass fed cows if possible)
Directions:
1. Preheat oven to 375.
2. On a large plate or flat bowl, combine flour and spices.
3. Dredge chicken in flour mixture and let sit for 4-5 minutes.
4. Heat oil in a large pan over medium-high heat.
5. Working in batches if necessary, add chicken and brown for 4-5 minutes. Flip and repeat on the other side (chicken doesn’t need to be cooked through).
6. Transfer chicken to a baking dish and bake for 8-10 minutes (or until fully cooked).
7. While chicken cooks, mix Frank’s hot sauce and butter and heat through either on the stove or in the microwave. Once chicken is cooked, pour sauce over the top and serve.
